Prepare potato casserole without using meat. Simple recipes in the oven and slow cooker. Add cabbage, cheese, onion and garlic to the main ingredient. Secrets of proper cooking and step-by-step recipes. We make the dish low-calorie, experiment with taste. A simple and satisfying dish with an alluring aroma and beautiful presentation.

Meatless potato casserole is an easy way to add variety to your daily diet. Yesterday's potatoes or mashed potatoes are the basis of the casserole. Also, the required ingredients - an egg, sour cream or cream, milk and cheese - can always be found in the refrigerator. The casserole can be served with homemade sauces. For example, creamy sour cream, garlic or tomato. This side dish goes well with any meat and fish dishes.

How to prepare a potato casserole so that it doesn’t fall apart, bakes evenly, doesn’t burn, and just turns out delicious?

Subtleties of cooking

  • In what form can potatoes be used? For this dish, take ready-made mashed potatoes or a tuber boiled until half cooked, cut into thin slices. You can also boil the vegetable in its jacket and grind it in a meat grinder. And the last option is to make a casserole from coarsely grated raw potatoes.
  • Remove excess liquid. If you are grating potatoes, you should squeeze them out before putting them in the pan. The same applies to other vegetables. For example, stewed cabbage should be placed in a colander. Then the dish will bake evenly and not burn.
  • Puree. After boiling the potatoes, drain all the water. Add only butter and salt. Do not leave an ounce of the water in which the potatoes were boiled, otherwise the casserole will fall apart.
  • Eggs. The number of eggs does not have to match the recipe. Take more - the mass will “stick together” better, less - the consistency will be looser.
  • Cheese. A lot of cheese is, of course, delicious, but sometimes it interferes with properly preparing potato casserole. It is better to distribute it between layers.
  • Filling. The sauce for pouring over the potatoes should be evenly distributed throughout the pan. To do this, pour not only into the center, but also on the sides of the container. Shake it several times and only then put it in the oven.

Potato casserole with minced meat in the oven in sour cream (step by step)

The most common recipe is with the addition of minced meat. I advise you not to stop at one type of meat; a mix of several varieties is always tastier. Combine pork with chicken and beef. In my case, there are also two types: veal and pork.

Required:

  • Minced meat, mixed – 400 gr.
  • Potato tubers – 600 gr.
  • Sour cream – 5 tablespoons.
  • Cheese – 100 gr.
  • Egg.
  • Bulb.
  • Garlic – 2 cloves.
  • Salt pepper.

First, start with the minced meat. If you make it at home yourself, then grind the meat in any way (meat grinder, blender). Grind the garlic with a press and add to the mixture. Pepper, add a little salt. Mix the minced meat thoroughly.

Chop the onion into half rings. If you come across a large specimen, divide the rings in half.

Cut the peeled tubers into circles.

The cheese must be grated, but not coarsely, use the small cells of the grater.

Place half the cheese in a separate bowl, add an egg, salt and pepper. Pour in sour cream. Mix thoroughly. This is a baking filling.

Grease the bottom and sides of the pan with vegetable oil. Place potato mugs in two layers.

Pour in the filling, using half of the total amount. Spread the minced meat filling evenly on top, as shown in the photo.

Scatter the onion slices. Cover the onions with potatoes in a single layer. Fill with remaining filling.

To ensure the potatoes are well baked, first preheat the oven to 200 o C. Cook for 30 minutes, wrapping the pan in foil - this will speed up the process.

Remove the dish and sprinkle with the remaining cheese. Return to baking for another quarter of an hour, but at a temperature of 180 o C. You will know that the dish is ready when you see a golden crust.

Recipe for potato casserole with fish in the oven

An original recipe for the dish, since fish is rarely used in making casseroles. However, lightly salted pink salmon and potatoes, when combined, make it possible to make a tasty dish. By the way, Kalalaatikko, which contains the favorite vegetable with herring, baked in the oven, is very popular in Finland.

Take:

  • Lightly salted pink salmon – 300 gr.
  • Chopped green onions - 2 large spoons.
  • Potatoes – 7 pcs.
  • Milk – 150 ml.
  • Eggs - a couple.
  • Carrot.
  • Dill, salt.

Bake:

  1. Cut the peeled potatoes into circles and place them in several rows on a greased baking sheet.
  2. Divide the pink salmon fillet into small pieces and place on top of the potato slices.
  3. Sprinkle with finely grated carrots, chopped dill, and green onions. Sprinkle with sunflower oil.
  4. Place in the oven for 25 minutes.
  5. At the same time, whisk the milk and eggs. When the top of the dish is baked, pour in the ingredients. Leave for another 20 minutes until the potatoes are ready.
  6. Using this recipe, you can prepare a casserole with lightly salted herring.

Attention! The fish does not have to be salted; I gave an option common in Scandinavian countries. In our country, it is more common to make a dish with any frozen fish with white meat.

How to cook meat casserole from potatoes and pork

The most delicious casserole, in my opinion. Made with pork, beef, turkey and chicken. The richness of the dish is appreciated here. And the cooking time is no longer than other recipes, so take note of the recipe.

Take:

  • Potato tubers – 5 pcs.
  • Pork – 300 gr.
  • Cheese – 150 gr.
  • Tomato.
  • Bulb.
  • Water – 150 ml.
  • Spices as desired, salt.

Step-by-step preparation:

  1. Cut the peeled vegetables into large circles.
  2. Divide the meat piece into cubes. Do not cut finely; the pieces should be about a centimeter thick.
  3. Place a pillow of potato slices on the bottom of the pan. You will need half the amount stated in the recipe.
  4. Distribute the meat pieces on top. Salt this layer and sprinkle with spices. I take seasonings for pork.
  5. Place onion slices and tomato slices over the meat.
  6. Pour water over the entire surface, sprinkle with grated cheese.
  7. Bake for approximately 30 minutes. The time depends on the features of your oven. Temperature within 180-200 o C.

Delicious mashed potato casserole

The dish has a delicate consistency and pleasant taste. You can prepare it from specially made puree, or use yesterday’s puree. My recipe has minced meat added. If you want a lighter dish, exclude it from the ingredients.

  • Potatoes – 1.5 kg.
  • Minced meat – 0.8 kg.
  • Milk - a glass.
  • Butter – 50 gr.
  • Olive oil – 3 tablespoons.
  • Cheese – 200 gr.
  • Pepper, salt, other seasonings.

How to cook:

  1. Boil the potatoes and puree them. Add butter, pour in milk. Stir and beat to form a fluffy mass.
  2. To make the casserole especially tasty, I recommend frying the minced meat. Fry over high heat, stirring vigorously with a spatula, while breaking up large fractions. If you like onions, add them, it won’t hurt, although the original recipe doesn’t have them.
  3. Cook in the oven, preheating the cabinet to 180 o C. Duration - half an hour. If necessary, add more time until light browning appears.

Potato casserole in the oven with chicken

The recipe is suitable for roasting with turkey. If you want the meat to be tastier, pre-fry it as in the previous recipe. To prepare, take any part of the chicken from which you can fillet it.

  • Potatoes – 6 pcs.
  • Carrot.
  • Chicken meat – 400 gr.
  • Spices, salt, vegetable oil.

  1. Peel the vegetables. Chop the onion into cubes and grate the carrots.
  2. Fry the vegetables in a small amount of oil. Add chicken. Chicken meat can be cut into cubes or turned into minced meat. Fry chicken with vegetables, seasoning with spices.
  3. Boil the potatoes, but not until fully cooked. Grate the half-raw tubers on a coarse grater.
  4. Add sour cream and eggs to potato chips. Mix the mixture thoroughly.
  5. Place a thick layer of potato mixture on the bottom of the oiled pan.
  6. Next add the chicken. Cover with a coat of leftover potatoes.
  7. Preheat the oven to 180 o C. Place the mold. Bake for 20 minutes. Then sprinkle with cheese and return to bake for another 10 minutes.
