Simple fast food, which a few years ago was strongly associated with McDonald's and Burger King, has become the mainstream of the capital's restaurant market. New burger joints are opening on every corner. One of the reasons for the boom is the emergence of affordable Russian-made marbled beef.

The trend was set a few years ago by food trucks (food trucks) and street food festivals, where The Burger Brothers, Burger Heroes and other similar projects debuted. Burgers were in demand, and budding restaurateurs moved from mobile outlets to stationary premises. “Neither of us had experience in the restaurant business. But we did everything ourselves, and studied at the same time,” says the founder of The Burger Brothers, Alexander Zalessky.

In the spring of 2015, the heavy artillery came into play: Arkady Novikov opened the first burger restaurant “#FARSH”. Now he is launching the fifth establishment of the chain. All around is the private sector, modern cottages coexist with wooden huts, and Ladas coexist with Mercedes. “I spent three months looking for a space,” says Ivan Kukarskikh, the 27-year-old founder of the BB & Burgers burger chain. — I drove the entire Ilyinskoye Highway from New Riga to Rublevo-Uspenskoye, went into every building along the road, tried to negotiate a lease. This is the “golden mile”: there is no other such location beyond the Moscow Ring Road.”

In 2012, Ivan had just returned from Switzerland, where he studied hospitality management at the Ecole hoteliere de Lausanne. During my studies, I often went with my university friends to the local burger joint Holy Cow. “I already realized then that burgers made from premium, high-quality meat are a promising trend that is gaining momentum,” says Kukarskikh. Ivan liked the format so much that he even defended his thesis on this topic: he presented a burger business project to the teachers.

Kukarskikh studied for 12 years in Canada, Spain and Switzerland, but decided to return to Russia: “In Canada and Spain the mentality is too different from us, and in Switzerland it’s just boring.”

In Moscow, he decided to start not with burger shops, but with the cafe-culinary “Farmer”. “Cooking seemed to me a simple and understandable format; I wanted to build a large network,” says Ivan. His father, Pavel Kukarskikh, began working in the restaurant business in the 1990s, opening his first restaurant, Mister N, in Yekaterinburg. By 2007, Kukarskikh Sr.’s company “Malachite” became the largest restaurant operator in Yekaterinburg. His chain of bakeries, Paul Bakery, has ten cafes in Moscow and 45 throughout Russia. The project, in which Ivan also invested 2 million rubles, was running at a loss. When, in the third month of operation, losses exceeded 300 thousand rubles, Kukarskikh Jr. decided that it was time to change the concept and realize his old dream - to make a burger shop.


Burgers and rock 'n' roll

The burger project that the entrepreneur defended in Switzerland did not help much. “A beautiful business plan and reality are just different planets,” says Ivan. He gained knowledge about cooking meat from YouTube. Before the start, I watched hundreds of videos about how burger joints work in the USA and other countries, and how to properly fry meat. The father helped with advice: he supported his son’s idea of ​​doing something of his own, rather than working in a family company, and lent money for the first establishment. “In our family, 80% of conversations are still about food and catering. Sometimes my father asks why, even on dates with girls, am I only able to talk about burgers?” - Ivan laughs.

The cookery was turned into a burger bar in two weeks: they bought a grill and a hood; in total, 200 thousand rubles were spent on equipment. There were problems with meat. Then, in 2012, marbled beef, according to Ivan, was still considered an exclusive product and cost many times more than it does now. He negotiated with farmers and resellers for the supply of chilled beef and began to fry the meat.

“At first I wanted to make such a cute European cookery in white colors, but the consumer did not understand,” says Kukarskikh Jr. “Then I thought: okay, here you go - grill, meat, onions. We started playing rock music in the background and allowing guests to draw on the walls with felt-tip pens while waiting for their order.” It worked: already in the first week they began to sell burgers and fries worth 15-20 thousand rubles. per day, and at the end of the first month the turnover amounted to 600 thousand rubles. Cooking previously at the same place brought in only 450 thousand rubles.

An aspiring entrepreneur made a mistake that almost cost him his business. “I bought the hood myself, and the owner of the premises installed it; we had no idea there would be filters there. And then one day, during the second month of the burger shop’s operation, I opened the door, and smoke was pouring out: it turned out that the hood was clogged, and it was a miracle that there was no fire,” the entrepreneur recalls.

In total, it took about 3 million rubles to launch the burger shop; the establishment made an operating profit in three months, and now the “garage” on Ilyinskoye Shosse brings in 3-4 million rubles. revenue per month, profit exceeds 500 thousand rubles. “If I hadn’t made all the mistakes and didn’t start the culinary business first, I could have spent 1 million rubles,” the restaurateur calculated.

When in the spring of 2014 the first outlet began to consistently generate profits, the entrepreneur decided that it was time to scale the business. “I understood that we were in a trend, we had positive dynamics, but it was very scary. It is psychologically difficult to jump from a rent of 120 thousand rubles. per month immediately for 600 thousand rubles, which was in the center. After all, in order to recoup such costs, it was necessary to make sales three to four times higher,” recalls Kukarskikh.

One of the most popular burger joints in Moscow at that time was Burger Brothers on Krasny Oktyabr. Ivan was guided by her. “It seemed to me that they were cool, and we were sitting on the margins. I even took their bun and went to my bakers and said, “I want the same,” the restaurateur recalls. He didn't know that The Burger Brothers had luck with the lease. “We were contacted by the owners of the cafe-bar “Products” on Krasny Oktyabr, who had a small room with a window to the street, and they offered to occupy it on partnership terms - for a percentage of the profit,” says the founder of The Burger Brothers, Alexander Zalessky.

Kukarskikh found a room of 65 square meters. m on Tsvetnoy Boulevard, the owners of which agreed to provide two months of rental holidays, and began to prepare for the launch. 4 million rubles were required for rent, repairs and equipment of the new point. Ivan claims that he earned this money from his first burger shop.

“I thought that we had worked out all the processes with our small team that worked at Ilyinka and selected the most popular menu items. But in reality, we weren’t ready for anything, everything was going wrong,” recalls Ivan. The fact is that the customer traffic in the center was much higher than on Ilinskoye Highway, the team did not have time to cook burgers and monitor cleanliness. Customers waited in lines, tables were littered with trash. The cooks could not keep up with the pace of work and quit after a month. “We managed to breathe out only in the third month, when we broke even and formed a team. I realized: that’s it, we’re hooked in the center. There is our sign here,” says Kukarskikh.
