There is usually no time for borscht on weekdays. Most often, I cook this delicious first dish on weekends. And on weekdays, when I return home tired from work, I often prepare a delicious soup with meatballs and noodles. This simple first course is very easy to prepare. I am pleased to invite you to evaluate my recipe, illustrated with step-by-step photos.

Ingredients:

200 grams of minced meat;

3 pcs. potatoes;

1 onion;

1 carrot;

100 gr. small vermicelli;

vegetable oil;

salt/pepper.

How to cook meatball and noodle soup

I would like to note right away that it is better to use chicken minced meat, it makes the broth beautiful and takes less time to cook. But, if necessary, it can be easily replaced with any other.

While the water is boiling, prepare the minced meat. Salt/pepper to taste, add a little onion (the amount depends on your desire). Meatballs are usually made purely from meat, they are small in size and when in the broth they will not be dry.

Before the water boils, we have time to prepare the potatoes by cutting them into cubes as in the photo.

Dip the formed chicken meatballs into boiling water. Form small meat balls with wet palms. Reduce heat to low to obtain a nice, clear, clean broth. We are waiting for it to boil.

Now that our hands are free and we have time, let’s prepare the frying. Chop the onion and grate the carrots.

Onions and carrots are taken medium-small in size. If they are large, then halves are enough, otherwise the soup will be too vegetable, and the sweetness of the carrots will affect its taste.

Pour vegetable oil into a frying pan. We do not fry the roast too much, but lightly - as in the photo.

The water with the meatballs has boiled, add the potatoes. There is not much noise (stumps) in the broth, but if it appears, it must be carefully removed.

Add the frying mixture to the soup that has boiled after adding the potatoes.

After 10 minutes, add salt and vermicelli.

Boil for no more than 5 minutes and remove from heat.

I rarely buy minced meat because I am not sure of its quality. It’s easier for me to grind a piece of meat in a meat grinder. Then I know exactly what it consists of. The ideal option is minced meat from several types of meat, each of which will bring its own taste and properties to this blend.

  1. Chicken meat will hold the minced meat together well and prevent it from falling apart during cooking.
  2. Pork meat, even fillet, has a high percentage of fat content. But meatballs with its addition will be juicy and soft.
  3. Veal is somewhat tough, but healthy.

Mixed mince is not for everyone. It is better for children, sick or elderly people and those losing weight to cook.
Choose fresh meat. Better - from a familiar seller at the market. The meat turnover there is faster than in the store, and the risk of buying a stale product is less. The meat should be:

  • juicy;
  • glossy, not dull;
  • with a pleasant, not pungent odor;
  • it must be kept refrigerated.

Pay attention to the surrounding nuances: the neatness of the seller, the cleanliness of the counter, the absence of insects.

The time of delivery of the product to the house also plays a role. You shouldn't go shopping with a piece of meat in your bag. After purchasing it, it is advisable to immediately go home.

If you are preparing ahead of time, it is better to cook. A more dietary option would be a vegetable soup with meatballs and cauliflower, zucchini, tomatoes and peas.

First you need to start preparing the noodles. This will take you about half an hour.

  1. Beat 2 eggs with salt until the mixture is salty enough. Gradually add sifted flour until you knead a stiff dough. Roll it out very thin and cut into strips. If you have a noodle cutting machine, even better. It will save you a lot of time.
  2. While you prepare the soup, place the noodles on a clean, dry, lightly floured surface.
  3. Meatball noodle soup is prepared similarly to noodle soup. Only the noodles need to be cooked a little longer.

You can change the minced meat and cook something unusual, but no less tasty.

How to speed up cooking

  1. Buy ready-made (but proven!) minced meat.
  2. Make homemade noodles in advance.
  3. Cook it.

Children will be absolutely delighted if they come across meatballs with different fillings. And you don't need to prepare anything extra. Open the refrigerator and look inside. You can stuff meatballs with any ready-made product: a piece of cheese, ham, milk sausage, canned peas or corn, capers, olives, a boiled egg or carrots...

How to decorate

  1. According to the classic recipe, noodle soup with meatballs is sprinkled with herbs.
  2. And you grate hard cheese on a fine grater. It will instantly melt into the hot soup and add a piquant flavor to it.
  3. Draw intricate patterns with a thin stream of sour cream and sprinkle them with pepper.
  4. Decorate the thick soup with chopped boiled eggs or carrots.
  5. Make soup with pasta nests. For this purpose, specially twisted long noodles are sold. But you can’t mix it. Therefore, such vermicelli is placed last, and everything is cooked over very low heat. Soup with pasta nests should be transparent so that they are clearly visible. I advise adding onions only to the minced meat, and cutting the carrots into cubes.
  6. Serve the soup in wide, large, colorful mugs. This, again, will interest children.
  7. Sprinkle with crackers or croutons. You can easily prepare them yourself. Especially if there is yesterday’s bread left in the house. Just cut it into cubes or bars and fry in vegetable oil. Don't forget to remove excess fat with a paper towel: place the croutons on it in a single layer until completely cool. If desired, croutons can be seasoned with garlic.

Peel the potatoes, cut them into cubes or long pieces, also peel the onions and carrots, cut them in half (half will be used for frying). Place potatoes and half an onion and a carrot into boiling water and cook the broth.










In the meantime, you need to make meatballs. To do this, add salt and pepper to the minced meat, you can add yolk and finely chopped onion. Next, small balls of the same size are formed.
